The 15 Cook Islands

The 15 islands of the Cooks lie halfway between New Zealand and Hawaii.

A mix of coral atolls and volcanic islands, good few of the nine Southern islands could be listed as “must see before I die”. An idyllic climate, stunning scenery, warm-hearted people and a desirable way of life where “hurry” has not been coined, make them irresistible. Bush clad volcanic peaks descend to glistening white sands and the inevitable palm-fringed blue lagoons. Rarotonga, the capital and Aitutaki, breathtakingly beautiful dominate the call of the conch. 

Rarotonga 

Dominated by a once almighty volcanic pyramid, now worn down by time and streams to sawtooth peaks and razorback ridges, the lush green carpeted Rarotonga, is the capital, and the hub of the Cook Islands. 

It is also the youngest island of the group, so unlike its equally enchanting sisters which have been eroded and submerged by age, Rarotonga stands brilliantly upright against the sun. Its vistas are strewn and spiked with jutting pinnacles that fall to terraces and flats planted with bananas, coconuts, paw paw and pineapples that shift into a swampy plateau marked by the inimitable taro patch. 


Aitutaki 

The view from here reveals a spectacular array of technicolor fish which can be seen close up by taking a Bishop’s Cruise (an experience in itself – the Aitutakians aptitude for song and dance and storytelling comes to the fore with a captive audience of sightseers.) Get your passport stamped on One Foot Island – step onto the first landing for the flying boats that flew the original Coral Route, go snorkeling in the clearest waters ever seen or simply spend a few hours slipping from sand to sea.

Travel "Winter" Smart

You'll need plenty of high-energy foods because you burn more calories in the cold. Drink plenty of fluids, but avoid caffeine.

Tip from the modelling world to prevent your hands from chapping, ALWAYS wear gloves when you're going out in the cold, even if it's just for a short time.

You'll want a layer that wicks moisture away from your body. Wear layers to stay warm. Loose clothing assists in circulation. Wear a neck gaiter to keep your neck and lower face warm. Pack a couple of 100% cotton T-shirts. They're breathable, warm and flexible - great for layering - and they can double as nightshirts.

It will be warmer if you do a few exercises before you get on the lift, and right after you get off. Go inside frequently to warm up.

Your face should be protected. Use moisturizer to provide protection from the wind. Don't forget the sunblock. Use a face mask or neck gaiter up over your mouth and/or nose.
Thermal socks are warm and help absorb moisture. Be sure you can move your toes in your boots to keep circulation moving. Toe warmers are great.

When traveling to Europe this past winter, I was faced with the challenge of putting together a warm and fashionable travel wardrobe into one carry on — not so simple for a California transplant who has forgotten what real cold feels like!


In the end, I used this fail proof list of what to bring while packing for my winter trip to Europe. It helped me pack everything in one carry on, keep warm once I was in Europe, and look good doing it!

Your hands may be better protected by mittens than gloves. Glove liners help. Remove metal rings and bracelets. Hand warmers are a good idea.

Holiday Travel And Your Children

Flying with children is tough enough, but during the winter holidays, crowded airports and delayed flights can conspire to make a parent’s job even harder. Here are some tips that will help smooth your journey.

Create a Play Zone

Even if your airport doesn’t have a year-round playground, airports sometimes set up seasonal activities or art exhibits during the holidays. Once you have cleared security, ask at an information desk about play areas and special services available for the holiday rush. Once you've found one, you'll leave one parent in the play zone with the children while the other runs reconnaissance gathering snacks, bottled water, and whatever else you want for your flight.

Plan Extra Time, a Must

Crowded freeways, full parking lots, and long security lines can feel like they’re conspiring to make you miss your flight. Your children are so frazzled by the time they get to the airport that they melt down long before you make it to your gate (especially if this is their first flight), and the bustling food court makes it tricky to get them the snack they so desperately need. Allow yourself an hour longer than you'd normally need, and your children might even get a chance to run off some energy before your flight boards.

Find the Family Lane

If your airport has more than one security checkpoint, ask which one has a “family lane.” Family lanes generally skip past the longest part of the security line, and TSA agents sometimes have stickers to give children after they pass through the metal detector. Keep in mind that children aged 12 and under do not need to remove their shoes at the security checkpoint, and that children too young to hold still never need to go through a backscatter X-ray.

Send Gifts Ahead

If you are packing gifts for your children or other family members, that extra bulk in your luggage can really wear you out. Instead, consider ordering gifts online and having them sent directly to your destination (most hotels will hold packages for your arrival). Barring that, look for easily packable gifts. Just remember to allow extra space in your luggage to bring home gifts you receive.

Pack Extra Activities and Charge the Batteries

Flight delays may mean that your children exhaust their busy bag activities before your travel is completed. To avoid a mid-flight meltdown, bring along more than you think you'll need, and then study up finger rhymes, hand-clapping games and card games. (This same advice holds for baby food and diapers, neither of which can be easily replenished in an airport shop). If you are relying on electronics to keep the children entertained, be sure your batteries are fully charged before you leave home. Don't forget to put any chargers in your carry-on bag for a quick top-up at the airport.

Stay Healthy

Mix a crowded airport full of people just at the beginning of flu season with a run-down family and you have a sure recipe for sickness on the flight home. Take the time to wash hands, keep children well hydrated, eat healthy snacks, and get enough rest so that you don’t get sick too. The fees for changing your flight due to illness can be shocking, and no parent wants to be in the position of dragging a sick child on an airplane.

Ireland Travel In The News

Part of Dublin Airport could go private. Does it matter to the average traveler or tourist that is coming for a visit or business? Does this change the traffic pattern for the airport.

There now seems to be some realistic chance that private enterprise will run any third terminal at Dublin Airport in competition with the existing facilities operated by State-owned DAA.

Yesterday the Department of Transport sought tenders for consultants to carry out a review of likely demand at the three State-owned airports, Cork, Dublin and Shannon, to 2050.

Whichever firm is hired will have to consider not just when Dublin should get a third terminal but to consider the advantages and disadvantages of allowing an independent player to run the new facility over the DAA.

Minister for Transport Shane Ross said his department was going to commission the study this year rather than in 2018, when it was originally due to be carried out, because of the growth at the airports, and particularly in Dublin which is set to shatter last year’s record of 25 million passengers.
You do not have to look far to see from where he might have taken the idea of getting an independent operator to run terminal three should it be built. Last July his department published a report by economic consultants Indecon which suggested that any new facility at the capital’s airport should compete with the existing terminals.

Indecon’s logic was that competition within the airport could help lessen the need for Dublin to be regulated and lead to lower charges for airlines, and thus a better deal for passengers.

Dublin is far bigger than any other airport in the country, State-owned or otherwise, so the Commission for Aviation Regulation regulates its charges. Given that it has more than 80 per cent of the Republic’s air passengers, it is unlikely that Cork or Shannon will ever close the gap.

Thus the only other alternative is for Dublin to compete with itself. Nobody knows just how realistic a proposal that is, but Indecon thought it was at least worth considering and it now looks like Ross agrees.

Culinary Travel: Slow-Cooker Corned Beef Dinner Recipe

Yes, you can cook Corned Beef Dinner in your Crock Pot. It makes a very nice aroma to come home to and a wonderful taste. It makes a very satisfying meal for your family.

Ingredients 

    2 to 2 1⁄2 lbs corned beef brisket
    1 medium onion, sliced
    1 stalk celery, cut in 3
    4 medium potatoes, peeled and halved
    4 medium carrots, peeled cut in 3
    1 cup beef bouillon
    1 bay leaf
    1 garlic clove, smashed
    1 teaspoon Worcestershire sauce
    1⁄2 teaspoon dry mustard
    4 small cabbage, cut into wedges
    1 teaspoon caraway seed

Directions

Trim brisket of all visible fat, cut to fit 4 qt or larger crockpot, if necessary.

Place onion, celery, potatoes and carrots in bottom of crockpot, lay brisket on top.

Whisk together bouillon, bay leaf, garlic, Worcestershire sauce and dry mustard.

Pour over brisket, cover pot.

Cook on low setting for 8 to 10 hours, adding cabbage wedges and caraway seed for the last hour of cooking.

To serve, discard cooking liquid, slice meat onto hot serving plates, accompany with the cooked potatoes, carrots, celery, cabbage wedges and your favorite mustard.

The Veterans Day Proclamation

World War I. known at the time as “The Great War”, officially ended when the Treaty of Versailles was signed on June 28, 1919, in the Palace of Versailles outside the town of Versailles, France. However, fighting ceased seven months earlier when an armistice, or temporary cessation of hostilities, between the Allied nations and Germany went into effect on the eleventh hour of the eleventh day of the eleventh month. For that reason, November 11, 1918, is generally regarded as the end of “the war to end all wars.”

In November 1919, President Wilson proclaimed November 11 as the first commemoration of Armistice Day with the following words: "To us in America, the reflections of Armistice Day will be filled with solemn pride in the heroism of those who died in the country’s service and with gratitude for the victory, both because of the thing from which it has freed us and because of the opportunity it has given America to show her sympathy with peace and justice in the councils of the nations."

The original concept for the celebration was for a day observed with parades and public meetings and a brief suspension of business beginning at 11:00 a.m.

An Act  approved May 13, 1938, made the 11th of November in each year a legal holiday, a day to be dedicated to the cause of world peace and to be thereafter celebrated and known as "Armistice Day." Armistice Day was primarily a day set aside to honor veterans of World War I, but in 1954, after World War II had required the greatest mobilization of soldiers, sailors, Marines and airmen in the Nation’s history; after American forces had fought aggression in Korea, the 83rd Congress, at the urging of the veterans service organizations, amended the Act of 1938 by striking out the word "Armistice" and inserting in its place the word "Veterans." With the approval of this legislation on June 1, 1954, November 11th became a day to honor American veterans of all wars.

Later that same year, on October 8th, President Dwight D. Eisenhower issued the first "Veterans Day Proclamation" which stated: "In order to insure proper and widespread observance of this anniversary, all veterans, all veterans' organizations, and the entire citizenry will wish to join hands in the common purpose. Toward this end, I am designating the Administrator of Veterans' Affairs as Chairman of a Veterans Day National Committee, which shall include such other persons as the Chairman may select, and which will coordinate at the national level necessary planning for the observance. I am also requesting the heads of all departments and agencies of the Executive branch of the Government to assist the National Committee in every way possible."

On that same day, President Eisenhower sent a letter to the Honorable Harvey V. Higley, Administrator of Veterans' Affairs (VA), designating him as Chairman of the Veterans Day National Committee.

In 1958, the White House advised VA's General Counsel that the 1954 designation of the VA Administrator as Chairman of the Veterans Day National Committee applied to all subsequent VA Administrators. Since March 1989 when VA was elevated to a cabinet level department, the Secretary of Veterans Affairs has served as the committee's chairman.

The Uniform Holiday Bill was signed on June 28, 1968, and was intended to ensure three-day weekends for Federal employees by celebrating four national holidays on Mondays: Washington's Birthday, Memorial Day, Veterans Day, and Columbus Day. It was thought that these extended weekends would encourage travel, recreational and cultural activities and stimulate greater industrial and commercial production. Many states did not agree with this decision and continued to celebrate the holidays on their original dates.

The first Veterans Day under the new law was observed with much confusion on October 25, 1971. It was quite apparent that the commemoration of this day was a matter of historic and patriotic significance to a great number of our citizens, and so on September 20th, 1975, President Gerald R. Ford signed Public Law 94-97, which returned the annual observance of Veterans Day to its original date of November 11, beginning in 1978. This action supported the desires of the overwhelming majority of state legislatures, all major veterans service organizations and the American people.

Veterans Day continues to be observed on November 11, regardless of what day of the week on which it falls. The restoration of the observance of Veterans Day to November 11 not only preserves the historical significance of the date, but helps focus attention on the important purpose of Veterans Day: A celebration to honor America's veterans for their patriotism, love of country, and willingness to serve and sacrifice for the common good.

Stay in Overwater Bungalows in Fiji

Fiji is certainly one of the most famous island groups in the South Pacific, and the name alone brings up images of thatched-roof huts in a perfect warm climate. Many people wonder if there are any overwater bungalows on Fiji, like the more famous ones on Bora Bora, Moorea, and Tahiti, and the answer is yes, but perhaps bad news is that it’s also one of the most expensive overwater bungalow resorts in the South Pacific.
The other interesting thing about Fiji is that it’s much more remote if you are coming from North America (or closer if you are coming from Australia or New Zealand), so it tends to draw visitors from some areas more than others. On the other hand, you can actually fly nonstop from Los Angeles to Fiji in about 10 hours, which is faster than cheaper compared to any other overwater bungalows except those on Tahiti itself.

If you are set on going to Fiji then you’ll find one of the finest such resorts in the world. It’s not cheap to stay in one of the overwater bungalows, but you also have access to one of the finest resort spas in the world.

This was created for a honeymoon couple from Los Angeles. They wanted a great beach with overwater bungalows, however, they wanted to go someplace a bit different than all of their friends. So we sent them to Fiji, where there is nothing more romantic than the overwater bungalows at Likliku Lagoon Resort, named Best Overseas Resort 4th consecutive year in Australia’s Luxury Travel Magazine annual Gold List Awards. The Likuliku Lagoon Resort is the first and only resort in Fiji with overwater bungalows and the room tariff includes amazing gourmet meals.   While at Likuliku, they enjoyed snorkeling, kayaking and paddle boarding.  We’ve paired this with Matangi Private Island for them, our favorite Fiji beach resort. They also got to experience great outdoor adventures like snorkeling, hiking to a waterfall, a local visit to a Fijian village and a tour to a Pearl Farm.  It is also features Horseshoe Bay listed in “1,000 Places to See Before You Die”.  They ended their Matangi stay with a dive at the Somo Somo Straits so they could enjoy the soft coral capital of the world.  This overwater bungalows vacation had two of the most romantic, private adults only resorts in Fiji with great beaches, food that’s to-die-for, and ample private moments for the two of them to be alone.

With a remote location near Fiji, the Likuliku Lagoon Resort is a 5-star hotel with 10 large overwater bungalows in addition to 35 beach villas and suites. Very popular with the honeymoon crowd, this resort is all about luxury, and the food is exceptional, but there are plenty of water sports and activities available for the active set.

The spa here is one of the finest in the South Pacific, located up on a hill overlooking the lagoon. Those interested in Polynesian culture will be very welcome here, as this luxury resort carries that theme throughout.

Off The Beaten Path: Poseidon Undersea Resort Fiji Never Happened

Poseidon Undersea Resorts was a proposed chain of underwater five-star resorts that was first slated to open by September 2008. The first was to be located on a private island in Fiji. The project was to be the world's first permanent one-atmosphere seafloor structure. Not all great ideas make it.  Here is a story of what could have been.

The Resort was to provide all the comforts, conveniences and opportunities only a five-star resort can offer, Poseidon’s Mysterious Island is the culmination of every elite vacationer’s vision. The proposed location was Katafanga Island in Fiji. With a design concept in mind, Jones needed to find an appropriate location. To help find it, Jones offered a $10,000 reward for anybody that came up with the perfect location for the venture. After taking the suggestion of a business associate, who recommended a reef off Eleuthera, an island in the Bahamas, negotiations began with the island's American owners. The negotiations did not go well, and after a year of failed back-and-forth offers the location was scrapped and sights were set off Fiji. The Poseidon undersea resort still doesn't exist.             

Planned activities were to be for adventurers who wish to explore the unimaginable, like maneuvering a personal Triton submarine through a lagoon, exploring the ocean’s depths as the passenger of a 1,000-foot luxury submersible, and scuba diving in pristine waters. Whether traveling alone, as a pair, or in a group, you will find what you seek.

Or, for a wedding ceremony or vow renewal truly unlike any other, reserve the undersea chapel. This splendid space offers an enchanting environment made all the more interesting with its ever-changing backdrop: a transparent wall overlooking a coral garden. After the ceremony, guests could be escorted to the dining room for cocktails and gourmet hors d’oeuvres as our staff quickly rearranges the space to produce a dance floor and suitable sit-down dining arrangements.

Outdoors
There’s something undeniably sensual about the sea: the salty fragrance of the ocean’s breeze, the rhythmic beat of the surf, the gentle curve of a rising wave… Plans for you and your partner could gladly abandon yourselves to this all-enveloping world where each sense is heightened. Culinary Travel: Fiji Lovo Style Cooking

In Fiji, the traditional way of cooking your meals was cooking them underground oven. This method of cooking is called a lovo. Today, lovo feasts are saved for for special occasions in the village and are regularly served at resorts to share a little bit of Fijian culture with travelers. In a lovo, all the food is prepared then placed in an underground oven and slow cooked for hours. The tradition is much like the New Zealand “Hangi” and is Fiji’s version of barbecue. Fish, Chicken and Pork are wrapped in foil and placed on the hot coals. Then for the ”palusami” which is made using taro leaves, filled with thick coconut cream, onions, salt and corned beef. It may sound a little strange, but palusami is quite delicious! Root vegetables such as Taro are peeled, wrapped in foil and placed in the coals as well. The meat, palusami, and vegetables are then covered in banana leaves which keeps the food nice and moist. Men (In traditional Fijian culture the mend tended to the fire while women prepared the Kava) will tend to the coals, occasionally flipping the food. Once the food has cooked for 3-4 hours, the food is removed from the underground oven and served family style. Want to bring a little Fijian culture to your backyard? Building Your Fire Pit

Dig a whole approximately 2 feet. deep and 3 feet. wide. This size fire pit should work for most average sized dinner parties. If you have a really large group of people you are feeding, you might want to make your whole a little larger to accommodate extra food. Place large stones or bricks around the inside of the fire pit. The stones insulate the walls of the fire pit creating an oven like effect. Then add firewood and kindling to the pit. We recommend using a hard wood such as hickory or oak. Hard woods burn slower, so you won’t need to constantly be adding more wood. Ignite the fire, and let it burn down until you have nice hot coals with no flames. Now it is time to start cooking your feast!

Lovo Recipe

Palusami

Ingredients:
1-2 dozen med sized taro leaves (Kale or Spinach can work as a substitute)
1 medium sized can of corned beef, or substitute
small can of coconut milk
several roughly sliced tomatoes
1-2 onions
garlic and herbs to flavor, as required

Directions:
First, remove the thickest parts of the taro stalks and put them into a bowl of hot water, while you prepare the main ingredients. This will not only leach out the acid in the leaves, it will make them pliable enough to bend.

Mix the corned beef with some of the coconut cream. You want to obtain a mix that still holds together. Add in your crushed garlic cloves, and any herbs/spices that you want to use. A pinch of dried sage and thyme perhaps.

Line a medium sized baking dish with foil, enough that you will be able to fold the top over and seal it. Then arrange the taro leaves along the bottom and sides of these. Try to have them overlapping so that there are no gaps.

Put half of the corned beef mixture in, and top with a layer of tomatoe slices and onion rings. Then add the rest of the beef, and finish with the last of the tomatoes and onions. You can pour a little coconut milk over this, and finally bend the taro leaves over the top and secure with toothpicks.

Cover the top of your Palusami parcel with foil, and place in the firepit.

Meats and Vegetables

Pick your choice of meats, lightly seasoning them with salt and pepper and fold them into foil packets and place over hot coals. Here is a fun recipe for a Lovo Pork with Apple Ginger Sauce if you want to get a little more fancy.

If you can find Taro, wonderful. If not, potatoes, yams, or turnips will work. Peel the root vegetables, toss in a bit of olive oil salt and pepper, place in foil packet and place on top of the meat packets.

Cooking Directions

After placing all of the foil packets over the hot coals, cover with banana leaves, corn husks, or a large piece of aluminum foil. Let food cook for 3-4 hours, occasionally flipping the packets with tongs.  Carefully take the foil packets out of the fire pit. Slowly open each packet and serve family style.

In The News: Ronda Spain

Ronda is a city in the Spanish province of Málaga. It is located about 62 miles west of the city of Málaga, within the autonomous community of Andalusia. Its population is approximately 35,000 inhabitants.

Around the city are remains of prehistoric settlements dating to the Neolithic Age, including the rock paintings of Cueva de la Pileta. Ronda was however first settled by the early Celts, who, in the 6th century BC called it Arunda. Later Phoenician settlers established themselves nearby to found Acinipo, known locally as Ronda la Vieja, Arunda or Old Ronda. The current Ronda is however of Roman origins, having been founded as a fortified post in the Second Punic War, by Scipio Africanus. Ronda received the title of city at the time of Julius Caesar.

In the 5th century AD Ronda was conquered by the Suebi, led by Rechila, being reconquered in the following century by the Eastern Roman Empire, under whose rule Acinipo was abandoned. Later the Visigoth king Leovigild captured the city. Ronda was part of the Visigoth realm until 713, when it fell to the Arabs, who named it Hisn Ar-Rundah ("Castle of Rundah") and made it the capital of the Takurunna province.

It was the hometown of the polymath Abbas Ibn Firnas (810–887), an inventor, engineer, alleged aviator, physician, Muslim poet, and Andalusian musician.

After the disintegration of the caliphate of Córdoba, Ronda became the capital of a small kingdom ruled by the Berber Banu Ifran, the taifa of Ronda. During this period Ronda received most of its Islamic architectural heritage. In 1065 Ronda was conquered by the taifa of Seville led by Abbad II al-Mu'tadid. Both the poet Salih ben Sharif al-Rundi (1204–1285) and the Sufi scholar Ibn Abbad al-Rundi (1333–1390) were born in Ronda.

The Islamic domination of Ronda ended in 1485, when it was conquered by the Marquis of Cádiz after a brief siege. Subsequently, most of the city's old edifices were renewed or adapted to Christian roles, while numerous others were built in newly created quarters such as Mercadillo and San Francisco. The Real Maestranza de Caballería de Ronda was founded in the town in 1572, with military finalities.

The Spanish Inquisitions affected the Muslims living in Spain greatly. Shortly after 1492, when the last outpost of Muslim presence in the Iberian Peninsula, Granada, was conquered, the Spanish decreed that all Muslims must either vacate the peninsula without their belongings or convert. Many people overtly converted to keep their possessions, while secretly practicing their religion. Muslims who converted only overtly were called Moriscos. Moriscos were required to wear upon their caps and turbans a blue crescent. Traveling without a permit meant a death sentence. This systematic suppression forced the Muslims to seek refuge in mountainous regions of southern Andalusia; Ronda was one such refuge.

On May 25, 1566 Philip II decreed the use of the Arabic language (written or spoken) illegal, doors to homes to remain open on Fridays to verify that no Muslim Friday prayers were conducted, and heavy taxation on Moriscos trades. This led to several rebellions, one of them in Ronda under the leadership of Al-Fihrey. Al-Fihrey's defeated the Spanish army sent to suppress them under the leadership of Alfonso de Aguilar. The massacre of the Spaniards prompted Phillip II to order the expulsion of all Moriscos in Ronda.

In the early 19th century, the Napoleonic invasion and the subsequent Peninsular War caused much suffering in Ronda, whose inhabitants were reduced from 15,600 to 5,000 in three years. Ronda's area became the base first of guerrilla warriors, then of numerous bandits, whose deeds inspired artists such as Washington Irving, Prosper Mérimée and Gustave Doré. In the 19th century the economy of Ronda was mainly based on agricultural activities. In 1918 the city was the seat of the Assembly of Ronda, in which the Andalusian flag, coat of arms and anthem were designed.

Culinary Travel: Coq au Vin Recipe

Coq au Vin is Chicken in Red Wine. Oh my it is so very tasty. It is a French dish of chicken braised with wine, lardons, mushrooms, and optionally garlic. A red Burgundy wine is typically used, though many regions of France make variants using local varietals

Ingredients

Olive oil
One 6- to 8-pound capon, cut into 8 to 10 pieces (You can use regular chicken if you can't find a capon, but I highly recommend searching one out.)
Kosher salt
All-purpose flour, for dusting
8 ounces slab bacon, cut into lardons
3 ribs celery, cut into 1/2-inch dice
1 large onion, cut into 1/2-inch dice
2 cloves garlic, smashed
1 pound cremini or white button mushrooms, quartered
1/2 cup brandy
1/4 cup tomato paste
3 cups hearty red wine
8 ounces small cipollini onions (If you can't find cipollini onions, pearl onions are a good substitute.)
4 to 6 cups chicken stock
3 bay leaves
1 bundle fresh thyme
12 ounces fingerling potatoes, cut in 1-inch slices
Fresh chives, finely chopped, for garnish

Coat a large 7-quart Dutch oven or rondeau with olive oil and bring to a medium-high heat. Pat the capon dry and sprinkle generously with salt. Working in batches if necessary, coat the capon gently with flour and put immediately in the hot oil. Only flour the capon that you are working with in that batch-no premature flouring! Premature flouring will result in doughy, gritty, mealy capon rather than crispy. Brown on all sides, and then remove from the pan to paper towels. Remove any excess oil from the pan.

Reduce the heat to medium and add the bacon lardons to the pan with a tiny splash of new olive oil. Cook the bacon until it is brown and crispy. Add the celery and onions, season with salt and cook until the veggies are starting to soften, are very aromatic and have no color, 7 to 8 minutes. Add the garlic and cook for 1 minute. Add the mushrooms and cook until the mushrooms give off their juices, 4 to 5 minutes. Stir in the brandy and cook until it has reduced down. Add the tomato paste and stir to combine. The mixture will become very thick-that is good! Stir in the wine and bring the mixture to a boil and cook for 4 to 5 minutes.

Meanwhile, bring a pot of well-salted water to a boil over medium heat. Toss in the cipollini onions, skin and all! Cook the onions for 3 to 4 minutes and then strain. When the onions are cool enough to handle, remove the skin and discard, reserving the onions.

Return the legs and thighs of the capon to the pan, reserving the breasts. Stir in enough chicken stock until the chicken is three- quarters covered. Add the bay leaves and thyme. Bring the mixture to a boil, and then reduce the heat to a simmer. Taste for seasoning and adjust if needed. Add the cipollini onions and the potatoes. Partially cover the pan and simmer for 20 minutes.

After the capon has simmered for 20 minutes, turn the legs and thighs over and add the breasts. Check the level of liquid and add more chicken stock if needed. Partially cover the pan and simmer for another 15 minutes.

Remove the capon from the pan and skim the sauce if necessary. If the sauce is on the thin side, reduce it down until it becomes a sauce-like consistency. Season. Transfer the capon to a serving platter, garnish with chopped chives and serve with lots of the sauce.
