Culinary Travel: Bangers and Mash Recipe

Bangers and mash, also known as sausages and mash, is a traditional dish of the British Isles made of sausages and mashed potatoes, and may consist of one of a variety of flavoured sausages made of pork or beef, or a Cumberland sausage. The dish is sometimes served with onion gravy, fried onions, baked beans, or peas. It is mostly eaten in the United Kingdom, Canada, Australia, and New Zealand. 

This dish, even when cooked at home, may be thought of as an example of pub grub, meaning it is relatively quick and easy to make in large quantities. More up-market varieties, with exotic sausages and mashes, are sold in gastropubs, with less sophisticated alternatives being available in regular public houses (pubs).

Ingredients

    2 pounds fresh veal or chicken sausages (8 large sausages)
    2 pounds Yukon Gold potatoes, peeled and diced
    Kosher salt
    4 tablespoons (1/2 stick) unsalted butter, diced
    4 ounces creme fraiche
    1/2 cup whole milk
    2 teaspoons Dijon mustard
    2 teaspoons whole-grain or coarse mustard
    1 teaspoon dry mustard
    1 teaspoon freshly ground black pepper
    Fresh parsley, for garnish

Directions

Preheat the oven to 425 degrees Fahrenheit

Place a baking rack on a sheet pan and arrange the sausages in one layer on the baking rack. Bake for 18 to 20 minutes, until the sausages are just cooked through.

Meanwhile, place the potatoes in a large saucepan with 1 tablespoon of salt and enough water to cover the potatoes. Bring to a boil and simmer for 20 to 25 minutes, until the potatoes are very tender. Drain the potatoes in a colander and return them to the saucepan. Add the butter, creme fraiche, milk, Dijon mustard, whole-grain mustard, dry mustard, 1 tablespoon salt, and the pepper and beat the potatoes in the pan with a handheld mixer on low speed until very smooth and creamy.

To serve, mound a generous portion of potatoes on a dinner plate and top with sausages that have been cut in half diagonally. Sprinkle with fresh chopped parsley and serve.

Cold Creek Railway at Windekind Farm & Country Cottages

Why did you decide to create your train? My goal was to build models of steam locomotives that operate exactly like the full size machines. These 1/5 scale models burn coal, make steam and have all the functions of their full size brethren.
I take special delight in presenting honest and accurate detail. For example, the correct casting number on a miniature part exactly like the full size part made over 100 years ago. This is my way of honoring the craft and skill of the old railroaders.

What can visitors do when they get to your attraction? At Windekind Farm we have three self-catering cottages. When lodging guests come here, they discover the railroad and quickly become very curious about this unique feature of our farm high in the Green Mountains.

As a former teacher, I seek to create an educational experience in my historic shop/museum equipped with working antique tools and steam locomotives. Then we go out on the railroad and operate trains with an emphasis on hands-on learning.

What’s your favorite memory of a guest experience at the farm? The Cold Creek was not built to be a guest attraction. Instead, it was built because it is important to us and we know that when we share it, it becomes even more important. Of course, the railroad, like the rest of the farm, is valuable in its own right, but without human engagement and the ongoing sharing with others of what we have created and what they create, it quickly fades.

What inspired you to create your spider web farm? When we moved to Vermont, we started a small business making wooden accessories. We were always looking for ways to expand our line, and wanted a small item that would attract attention to our display. Being out in the country, spiders were all around, including in the shop. We found we could capture and preserve these webs and turn them into delicate works of art. Now we consider it our tribute to nature.

What can visitors do when they get here? The first thing visitors want to see is how we do it–and we don’t mind showing off. We show them the farm and hear their “ohhs” and “ahhs.” If the weather isn’t suitable for collecting we go into the store and they experience the process through stories and pictures.

We talk about “the girls,” Will’s friendship with “Charlotte,” and anything else the visitors want to know! People leave happy because there are plenty of stories and jokes to share.

What’s your favorite memory of a guest experience at the farm? We’ve had visitors from all over the world find us. Many have come back after years and years to see if we’re still here and collecting, and to buy a web or two. We’ve heard through the grapevine about a woman who visited the Spider Web Farm as a youngster and was so impressed that she became a biologist and a teacher.

The most recent and happiest memory is of a young family who stopped by because their 3-year-old loved spiders. She picked out her own web and left after giving me a big hug.

Award Wining Cherry Pie Recipe

This is called Award Winning Cherry Pie because it is a blue ribbon winner at the county fair in Vicksburg, MS. When tested we think  it's a blue ribbon winner.

Ingredients

    1 1⁄4 cups sugar
    3 tablespoons cornstarch
    1⁄4 teaspoon salt
    1 tablespoon butter, softened
    2 (14 1/2 ounce) canspitted tart cherries, drained and reserving 1/2 cup juice
    1⁄4 teaspoon red food coloring
    1⁄4 teaspoon almond extract
    2 teaspoons lemon juice
    1 pastry for a double-crust 9-inch pie

Directions

    Preheat oven to 400 degrees Fahrenheit.
    Drain cherries, reserving 1/2 cup juice.
    Combine sugar, cornstarch and salt.
    Combine cherry juice, food coloring, almond extract and lemon juice.
    Add to dry ingredients, mixing well.
    Add cherries and mix well again.
    Add butter and let stand for 15 minutes.
    Pour cherry mixture into pie crust and finish top with lattice work pie crust.
    Bake for 50 to 55 minutes.

Rawhide Travel & Tours Honors Presidents' Day

Honoring all past Presidents of the United States

Until 1971, both February 12 and February 22 were observed as federal public  holidays to honor the birthdays of Abraham Lincoln (February 12) and George Washington (February 22). In 1971 President Richard Nixon proclaimed one single federal public holiday to be observed on the 3rd Monday of February, honoring all past presidents of the United States of America.

The federal holiday celebrated on the third Monday in February is not officially called Presidents' Day. Instead, it is Washington's Birthday. There was an attempt in 1968 to officially name it Presidents' Day. However, this suggestion died in committee. Many states, however, choose to call their own celebration on this day "Presidents' Day."

Traditionally, many celebrated and continue to celebrate Washington's Birthday with desserts made with cherries. Cherry pie, cherry cake, bread made with cherries, or just a huge bowl of cherries are often enjoyed on this day. Of course, this relates to the legendary story that Washington would not tell a lie when asked if he cut down a cherry tree.

On February 22nd of almost every year since 1888, Washington's Farewell Address has been read in the US Senate. While this does not happen on Presidents' Day, it is an annual celebration of Washington's Birthday that stems from 1862 when the Address was read as a way to boost morale during the Civil War. This address was and is so important because it warns of political factionalism, geographical sectionalism, and interference by foreign powers in the nation's affairs. Washington stressed the importance of national unity over sectional differences.

In The News: Norwegian Cruise Line Orders 4 New Ships

On February 16th 2017, Norwegian Cruise Line announced the company had ordered four new ships expected to be delivered over the next eight years, with an option for two additional vessels.

In a press release, Norwegian Cruise Line said that it expects the four new 3,300-passenger ships to be delivered in 2022, 2023, 2024 and 2025, and the two optional ships it could add to its order would be delivered by 2026 and 2027.

The deal was struck with Italian shipbuilder Fincantieri S.p.A.

Each of the four ships is expected to be 140,000 gross tons and cost Norwegian an estimated $851 million. The new vessels will be designed based on the cruise line’s Breakaway-Plus Class ships, but they will be smaller overall, holding 1,000 fewer passengers.

Norwegian’s fourth Breakaway Plus ship will debut in winter 2019.

“This new class of ships will continue Norwegian Cruise Line brand's legacy of introducing meaningful innovation to the cruise industry,” Norwegian Cruise Line CEO Frank Del Rio said in a statement. “This order continues to highlight our disciplined newbuild program, extends our growth trajectory well into the future, enhances our already attractive earnings profile and drives expected long-term returns for our shareholders.”

As a corporation, Norwegian Cruise Line Holdings Limited is also sending its Oceania Cruises and Regent Seven Seas Cruises brands to Cuba but only on three dates on Marina in March 2017 and two on Seven Seas Mariner in April respectively. The weekly frequency of Norwegian’s departures will be more akin to what Fathom has been offering every other week but will stop beyond May when its approval expires.

According to the U.S.-Cuba Trade and Economic Council, Inc., Richard D. Fain, Chairman and Chief Executive Officer of Royal Caribbean Cruises, Ltd., referred to the originally scheduled April and May sailings to Cuba as a “trivial part of [its] business.” Of course, only three sailings would have been, but now with closer to three dozen in the pipeline, the company has a longer term strategy matched only by Norwegian and smaller operator Pearl Seas Cruises to a lesser degree, at least as far as convenient roundtrip sailings from the U.S. are considered. Others, like Celestyal Crystal, sail American travelers intra-island.

Off The Beaten Path: The Makawao Forest Maui

Visit Maui’s enchanted Makawao Forest, also known as the Kahakapao Trail, for a calm walk through woods, an adventurous hike through nature, or a sensational bike ride in Hawaii. When hiking or biking on Maui, all participants are gifted with a truly sensational experience, especially when journeying through the Kahakapao Trail. This forest offers a genuine outdoor vacation experience for everyone, and is located at the very top of Piiholo Road. 

The 5.2 mile Kahakapao Loop provides picnic tables on both the East and West sides of the trail, making it easy to pack a lunch, stop, rest and enjoy the breathtaking scenery. Throughout the Makawao Forest, see wild Koa, young Redwoods, Cook Pines, Eucalyptus varieties, Rasberry bushes, and sweet fragrant Ginger plants. 

The temperature at this elevation is cooler than at sea level, allowing for a calm and comfortable morning or afternoon. After this fun adventure in Up Country Maui, travel to Makawao Town, a historically infamous Maui Paniolo (cowboy) Town. Here, guests can stroll the area shopping at a selection of ‘singular’ Maui boutiques and galleries, and dine at delicious restaurants like the Makawao Steak House and Market Fresh Bistro.

Hiking Directions – Lava Tubes: From the parking area follow the wide chip trail to a t-intersection. Make a right at the intersection and go down a gentle hill. As the trail bends around to the left (the loop trail) you will see an old weathered sign and the Waihou Springs trail to the right. Take this trail and follow it to a bench. Just past the bench you will see a trail heading steeply down the hill to the right. Follow these switch backs to the bottom. Once at the bottom you will see what used to be a large waterfall in an old stream bed. The lava tubes are all through the rock that made up the waterfall. Explore at your leisure. You may want to bring a flashlight.

Valentine's Day Shrimp Scampi Recipe

One very favorite treat for males and females alike is Shrimp Scampi and they find it perfect for special occasions. "Scampi" by itself, is also a dish of shrimp served in garlic butter and dry white wine, served either with bread, or over pasta or rice, although sometimes just the shrimp alone. Most variants of the "shrimp scampi" come on pasta.  National Shrimp Scampi Day occurs annually on April 29.

Ingredients

1 (8 ounce) package angel hair pasta
1/2 cup butter
4 cloves minced garlic
1 pound shrimp, peeled and deveined
1 cup dry white wine
1/4 teaspoon ground black pepper
3/4 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley 

 Directions

Bring a large pot of salted water to a boil. Stir in pasta and return pot to boil. Cook until al dente. Drain well.

Melt butter in a large saucepan over medium heat. Stir in garlic and shrimp. Cook, stirring constantly, for 3 to 5 minutes.

Stir in wine and pepper. Bring to a boil and cook for 30 seconds while stirring constantly.

Mix shrimp with drained pasta in a serving bowl. Sprinkle with cheese and parsley. Serve immediately.

Preparation Time: 15 minutes
Cooking Time: 10 minutes
Ready In Just: 25 minutes

Travel Together For Valentine's Day

Valentine's Day, also called Saint Valentine's Day or the Feast of Saint Valentine, is an annual holiday celebrated on February 14. It originated as a Western Christian liturgical feast day honoring one or more early saints named Valentinus, and is recognized as a significant cultural and commercial celebration in many regions around the world, although it is not a public holiday in any country.

Several martyrdom stories associated with the various Valentines that were connected to February 14 were added to later martyrologies, including a popular hagiographical account of Saint Valentine of Rome which indicated he was imprisoned for performing weddings for soldiers who were forbidden to marry and for ministering to Christians, who were persecuted under the Roman Empire. According to legend, during his imprisonment, Saint Valentine healed the daughter of his jailer, Asterius, and before his execution, he wrote her a letter signed "Your Valentine" as a farewell.

Numerous early Christian martyrs were named Valentine. The Valentines honored on February 14 are Valentine of Rome (Valentinus presb. m. Romae) and Valentine of Terni (Valentinus ep. Interamnensis m. Romae). Valentine of Rome was a priest in Rome who was martyred in 269 and was added to the calendar of saints by Pope Galesius in 496 and was buried on the Via Flaminia. The relics of Saint Valentine were kept in the Church and Catacombs of San Valentino in Rome, which "remained an important pilgrim site throughout the Middle Ages until the relics of St. Valentine were transferred to the church of Santa Prassede during the pontificate of Nicholas IV". The flower-crowned skull of Saint Valentine is exhibited in the Basilica of Santa Maria in Cosmedin, Rome. Other relics are found at Whitefriar Street Carmelite Church in Dublin, Ireland.

The day first became associated with romantic love within the circle of Geoffrey Chaucer in the 14th century, when the tradition of courtly love flourished. In 18th-century England, it evolved into an occasion in which lovers expressed their love for each other by presenting flowers, offering confectionery, and sending greeting cards (known as "valentines"). In Europe, Saint Valentine's Keys are given to lovers "as a romantic symbol and an invitation to unlock the giver’s heart", as well as to children, in order to ward off epilepsy (called Saint Valentine's Malady). Valentine's Day symbols that are used today include the heart-shaped outline, doves, and the figure of the winged Cupid. Since the 19th century, handwritten valentines have given way to mass-produced greeting cards.

Saint Valentine's Day is an official feast day in the Anglican Communion, as well as in the Lutheran Church.[9] Many parts of the Eastern Orthodox Church also celebrate Saint Valentine's Day, albeit on July 6 and July 30, the former date in honor of the Roman presbyter Saint Valentine, and the latter date in honor of Hieromartyr Valentine, the Bishop of Interamna.

Off The Beaten Path: Alelele Falls Piilani Highway Maui

Are you up for some adventure in a rainforest? How does a short hike to see a 50-foot waterfall sound? Let’s do it!

Along  the road to Hana, you can find an abundance of waterfalls. Some waterfalls are visible from the road while many others require a short hike. Alelele Falls is one of those waterfalls requiring a short hike of approximately 15 minutes.

The hiking trail to the falls follows along the Alelele Stream and it’s a good idea to wear a hiking sandal or shoe that can get wet. We did have to cross the stream. You will also had to climb over large rocks.

Alelele Falls is located in the Kipahulu region of Haleakala National Park. Use this link to a park map and look for Alelele Stream. You might refer to this Google Map indicating Alelele Falls noting that the blue marker identifies the general area of the falls. As for nearby landmarks, look for a bay (Lelekea Bay) and the Alelele Bridge – between the 38 and 39 mile markers on Highway 31 (Pilani Highway).

After parking your car at the Alelele Bridge pullout, follow the trail north from the east side of Alelele Stream for roughly 10-15 minutes to the falls. There was at least one stream crossing, possibly more, depending on which criss-crossed footpath you follow. The stream crossings required some nifty rock hopping, and you might wet if the water flow

The area also is known as Alelele Cabyon a classic 1/2 day route located on the "dry" south side of the Island. Generally good flow year-round for this stream, often a go-to route when rain and water levels are too high elsewhere on the Island.

Be extra cautious and aware of the possibility of flash floods. Don’t attempt this hike after a significant rain.

You should also note that Alelele Stream basically marks the end of the rental car approved section of the road to Hana. Beyond this point is often referred to as the “back side of the road to Hana” and is forbidden by most major rental car companies.

Culinary Travel: Brown Rice, Ground Beef and Vegetable Stir Fry

Cooking Hawaiian Style continues to be a gathering place that celebrates the richness of Hawaii's culinary culture featuring Hawaiian and Hawaiian-style recipes from all ethnicities.  We love classic Hawaiian-Style classics such as hamburger steak, fried rice, potato macaroni salad, guava chiffon cake, spam fried saimin, spam musubi and and yes... an amazing brown gravy recipe to go with that hamburger steak!  

Ingredients

1 tablespoon sesame oil
2 to 3 cloves garlic
1 pound 93% or leaner ground beef
1 pound mushrooms, sliced
1 pound. brussels sprouts, halved and roasted or steamed
1 tablespoon oyster sauce
1 tablespoon Aloha Shoyu
Salt and pepper to taste
1 pound brown riced, cooked *cooked weight (16 ounces)

Directions

Place brussels sprouts on cookie sheet and drizzle with 2 tablespoons olive oil.  Roat at 375 for 30-45 minutes until sprouts turn brown.  If you prefer, you can simply steam brussel sprouts for 15 minute.

In a hot pan or wok, heat sesame oil until it starts smoking.  Add ground beef and chopped garlic.  Cook ground beef until browned and add soy sauce and oyster sauce.

Add mushrooms and cook for another 5-10 minutes covered.  Add rice, brussels sprouts and mix well.  Season with salt and pepper to taste and add additional soy sauce/oyster sauce to your preference.  Nutritional info is included below.
