Off the Beaten Path - Bahamas

Although this list might contain a few places more on the well-traveled path, we thought they were still worth a mention.

The Cloisters Nassau
Stroll about the remains of a 14th century French Monastery that was imported, stone by stone, to the United States by the newspaper Baron William Randolph Hearst in the 1920s; 40 years later the Cloisters were bought by Huntington Hartford and installed at the top of a hill on Paradise Island overlooking Nassau Harbor. 


Queen's Staircase
The Queen's Staircase, commonly referred to as the 66 steps, is a major landmark that is located in the Fort Fincastle Historic Complex in Nassau. It was hewn out of solid limestone rock by slaves between 1793 and 1794 and it is said that it provided a direct route from Fort Fincastle to Nassau City. These steps were later named in honor of Queen Victoria, who reigned in Britain for 64 years from 1837 to 1901.  

There are only 65 steps visible because the pathway that leads to the steps was paved and the bottom step is buried under the asphalt. Great photo opportunity.

The National Art Gallery of The Bahamas
Housed in the historic Villa Doyle, built in the 1860s and lovingly restored in the 1990s, the NAGB preserves the National Collection of Bahamian Art, part of which is on permanent display on the ground floor. Upper galleries engage the history of Bahamian Art and Visual culture and support contemporary movements and experimental contemporary art practice through temporary exhibitions. The NAGB also has an extensive public program schedule, community and regional projects and partnerships, arts education workshops, and a free public art library. 


Pirates of Nassau Museum
The Pirates of Nassau interactive museum provides an opportunity for you to experience the Golden Age of Piracy.

Culinary Travel: Bahamian Must Eat: Fire Engine

Among the favorite Bahamian soul foods is a dish called Fire Engine. Perhaps more widely recognized as Steamed Corned Beef, this traditional breakfast is an absolute staple in the diets and culture of The Bahamian people. Canned corned beef sautéed with a medley of diced veggies and served alongside generous portions of buttery grits or rice is a dish designed to keep you satisfied from your first delicious bite to your next meal. What Is Fire Engine?

This salty, spicy, savory comfort food (or local hangover cure) is typically served at breakfast but like any good staple can also be enjoyed for any meal of the day. Keeping costs low and energy high, the bread basket, shelf-stable items that make up the core ingredients of the dish include: corned beef, tomato paste, corn kernels, seasonings, and grits or rice. Other ingredients of Fire Engine can be locally harvested or are easily accessible in the food markets, ie: onion, sweet pepper, celery, and tomatoes. Notably, a Fire Engine meal costs little to produce and keeps your belly warm and satisfied for a good while or at least until you’re ready to devour a second helping.

Origins Of The Dish:

Most interestingly, the name ‘Fire Engine’ has ambiguous origins. Like any good mystery, the more people you ask the more mislead you feel. We’ve narrowed our findings down to two of the most popular explanations you’ll encounter on the island:

A commonly cited theory is that Bahamian cooks add so much local, goat pepper to the dish that it feels like your mouth is on fire. And (ever so dramatically) you’d require the emergency assistance of a fire brigade to squelch the flames.

Another explanation you might hear signals the rich red tomatoey sauce of the steamed corned beef once prepared which contrasts the white grits or rice that the cook chooses as the starchy foundation of their version. Along with the optional bright yellow corn kernels thrown in for sweetness, the final result of this recipe resembles the aesthetics of a fire truck.

If seeing is believing, then we believe, tasting is understanding. We hope you’ll give this one a try on your next trip and decipher for yourself which explanation for its name you subscribe to.

Ingredients:

1 tablespoon canola oil
2 cans (12 ounces each) corned beef
1 medium onion, chopped
1 small green bell pepper, chopped
1 stalk celery, chopped
1/4 teaspoon thyme
3 tablespoons tomato paste
3/4 cup water
1/2 teaspoon black pepper
salt to taste

Directions:

On medium-high heat, sweat the onion, green bell pepper, and celery in a large frying pan with canola oil until translucent

Add all remaining ingredients into the frying pan, stirring regularly until the corned beef is heated through and becomes a smooth consistency

Reduce the stovetop to low heat, cover the frying pan with a fitted lid, and allow the ingredients to steam and flavors to develop for 15 minutes

The recipe yields a milder-flavored dish. If you prefer more heat, add diced hot pepper (local, Bahamian goat pepper preferred) or hot sauce to taste while cooking. And if you’re trying to limit your salt intake, it’s worth checking labels, since sodium levels vary among corned beef brands. Enjoy!

Off the Beaten Path - Jamaica

Most travelers flying into Jamaica are booked into one of the resorts lining the island's northern coast. These guests may leave the hotel properties for an excursion or two to iconic sights such as Dunn's River Falls, but many are content to simply relax by the pool that is only steps away from the buffet. However, if you want adventure and the road less traveled, it is there just waiting to be explored.

Port Antonio
Port Antonio is on the eastern side of Jamaica's north shore, 120 miles from Montego Bay's International Airport. This has isolated "Porti" from mainstream tourism, which many will say is a huge plus for the region. Ask Jamaicans where they go to relax and chances are Port Antonio will be their answer. The pace is slow, the hillside lush and green and the beaches are secluded. There's also a range of hotels that fit a variety of travel budgets, including boutique properties.

A visit to Port Antonio can include waterfall hikes, bird watching, swimming in the turquoise ocean, and dining on authentic jerk cooking — many Jamaicans claim the best jerk cooking can be found in the roadside stands along Boston Bay.

Romantic couples will want to book a rafting trip upon the Rio Grande. There's nothing whitewater about the experience. This is a gentle, scenic ride along a river edged with towering trees. The raft only holds two passengers and is guided by an individual raft captain. For an extra boost to the romantic mood, there's also the option for a nighttime trip, when the moon is full.

Southwestern Jamaica
Those looking for slightly less isolation should consider exploring southwestern Jamaica, just a 90-minute drive from Montego Bay. Jamaica's southwestern coast lacks an international airport, and much like Port Antonio, the region is less accessible to mass tourism. There are several top notch tour operators — including Island Routes Caribbean Adventure Tours and Chukka Caribbean Adventures — that provide a comprehensive one-day experience of the south coast.

Major southwestern coast sights include a safari excursion on the Black River, where crocodiles can be observed; a tour of the historic Appleton Rum Estate (including a tasting) and kicking back at YS Falls, where visitors can hurl themselves over a waterfall pool via a Tarzan swing.

Those looking to delve deeper into the attractions of the south coast will want to stay a few nights. A full-on resort experience can be had at the all-inclusive Sandals Whitehouse European Village & Spa. If travelers are looking for a more intimate place to lay their head, they could do no better than Jake's, a beachfront boutique hotel with an appealing hand-crafted ambience. There are 31 thatch roofed accommodations to choose from, including those that resemble traditional modest, tin-roofed Jamaican homes.

Mandeville & Central Jamaica
Jamaica isn't all about white-sand beaches and bright blue waters, landlocked Mandeville in Central Jamaica is something else altogether. Mandeville is 64 miles west of Jamaica's capital city of Kingston, and is the island's only major city not located on the coast or on a river. The town was named after Viscount Mandeville, the eldest son of the Duke of Manchester and a former governor of Jamaica. Mandeville boasts the Caribbean's oldest golf course, the Manchester Golf Club, dating back to 1868.

Culinary Travel: Jamaican Jerk Chicken

Jerk Chicken is believed to have been conceived when the Maroons introduced African meat cooking techniques to Jamaica which were combined with native Jamaican ingredients and seasonings used by the Arawak. The method of smoking meat for a long period of time served two practical purposes, keeping insects away from the raw meat and preserving it for longer once it has been cooked. This process also introduces a strong smoky flavor to the meat.

There are two commonly held theories regarding how the name "Jerk" came to be used. One is that it originates from the Spanish word "Charqui", used to describe dried meat. Over time this term evolved from "Charqui" to "Jerky" to "Jerk". Another theory is that the name derives from the practice of jerking (poking) holes in the meat to fill with spices prior to cooking. Nowadays, the word "Jerk" is used as a noun to describe the seasoning applied to jerked food and as a verb to describe the process of cooking used.

Hot, succulent Jamaican Jerk Chicken is a tropical treat. You'll love the heat and flavor of this fiery marinade.

Ingredients

6 skinless, boneless chicken breast halves - cut into chunks
4 limes, juiced
1 cup water
2 teaspoons ground allspice
1/2 teaspoon ground nutmeg
1 teaspoon salt
1 teaspoon brown sugar
2 teaspoons dried thyme
1 teaspoon ground ginger
1 1/2 teaspoons ground black pepper
2 tablespoons vegetable oil
2 onions, chopped
1 1/2 cups chopped green onions
6 cloves garlic, chopped
2 habanero peppers, chopped

Directions

Place chicken in a medium bowl. Cover with lime juice and water. Set aside.

In a blender or food processor, place allspice, nutmeg, salt, brown sugar, thyme, ginger, black pepper and vegetable oil. Blend well, then mix in onions, green onions, garlic and habanero peppers until almost smooth.

Pour most of the blended marinade mixture into bowl with chicken, reserving a small amount to use as a basting sauce while cooking. Cover, and marinate in the refrigerator for at least 2 hours.

Preheat an outdoor grill for medium heat.

Brush grill grate with oil. Cook chicken slowly on the preheated grill. Turn frequently, basting often with remaining marinade mixture. Cook to desired doneness.

Tip
Aluminum foil can be used to keep food moist, cook it evenly, and make clean-up easier.

In the News - Fox Village, Japan

Located in the mountains near Shiroishi, there is a ‘village’ that is filled with over 100 animals and 6 different types of foxes. This ‘Fox Village’ is one of the best places in Japan to go and see foxes. The foxes freely roam a preserve which visitors can enter. Foxes are popular creatures in Japanese folktales and lore, and many of us may be interested in the history and culture behind these foxes. However, the main reason to visit Fox Village is to be overwhelmed with fox cuteness and interactions.

When you enter and pay the admission fee, you can also buy some food for the foxes for 100 yen. There are several rules about when and how to feed the foxes. The staff will explain the rules to you in Japanese, and they have a sign with pictures and red Xs to help you understand. Remember, for your safety as well as the safety of the resident foxes, please pay close attention to the instructions.

The first part of Fox Village is more like a petting zoo. There are a few foxes, either in cages or with a collar and leash. There are also some bunnies that you can pet and hold, miniature horses and some goats. This part of the village alone is enjoyable. You can pet the animals and take pictures with them. But don't think that that is all this village has to offer.

The main part of fox village is through a door. This area is open, and the foxes can walk around the entire area freely. There are lots of trees and bushes, and you can feel like you are actually out in the wilderness. Most of the furry residents are in this area, of all varieties and colors. Some will scamper up to you with curiosity, others will run away, and many will be curled up in adorable cuddly looking positions, sleeping or resting. You might find some following you about looking for that food you bought. You can get really close to the foxes, but please keep in mind, they are wild. I would not advise trying to touch them because they may bite you. Some of them are obviously unfriendly and will shy away from you. There is little to no supervision from employees in this area, so be very cautious and use common sense.

The preserve has structures and little houses for the foxes, and there is a shrine with statues and a torii too. The area is beautiful and fun to walk around. The Miyagi Zao mountains are also beautiful and scenic. Fox Village is near the town of Shiroishi, which you can take a local or bullet train to get to. However, Fox Village is a 20-30 minute drive into the mountains from Shiroishi Station. You will need a car or a taxi. The drive to Fox Village is very scenic and enjoyable, especially when you can see the autumn leaves. Currently, admission is 1,000 yen for adults and free for elementary school aged children and younger. Fox Village also has a small gift shop and food shop.

Miyagi Prefecture is on the Pacific coast of the northern Tohoku region of Honshu, and was one of the most severely damaged areas during the 2011 earthquake and tsunami. Despite this, There is still much to see and do in the area and many tourist areas remain intact and undamaged.  The capital and largest city is Sendai.

Castles

Shiroishi Castle
 Nestled in the south-east of Miyagi Prefecture, the small city of Shiroishi might not seem like an ideal vacation stop when compared to other sights nearby like the hot springs of Naruko or the islands of Matsushima. However, this small town is a surprising little treasure trove of Japanese culture, especially samurai lore. While the town does have a small Kabuki theater and a model restoration of a samurai home, the main attraction is Shiroishi Castle. Shiroishi Castle is a recent reconstruction.  It was rebuilt using traditional methods, and is quite faithful to the original.

Aoba Castle
Aoba Castle in Sendai consists of ruins and some reconstructed buildings.  There is currently some reconstruction or restoration going on. It’s also known as Sendai Castle. Aoba Castle was built in 1600 by the powerful feudal lord Date Masamune. Because of considerations for the castle's defense, Masamune chose to locate his fortifications on Mount Aoba, 100 meters above the town below.

In the last 400 years the castle endured the anti-feudal fervor of the Meiji Period, a giant fire in 1882 and the carpet bombing of 1945. Now all that is left of the castle are remnants of the outer stone walls and a guard tower. The location's lookout onto the city below presently serves an aesthetic rather than military role, though a statue of Masamune, armor-clad and horseback, recalls the site's origins.

Naruko Gorge 

Naruko Gorge is one of the Tohoku Region's most scenic gorges. It is located in north-western Miyagi Prefecture, about 70 kilometers from Sendai and two kilometers from the small hot spring town of Naruko Onsen. Every year around late October to early November, the gorge transforms into one of the region's most popular autumn color spots. This is when the Gorge is the busiest, but other times of the year you might find yourself quite alone.

The gorge stretches about two kilometers east-west. The best area for autumn leaf viewing is around the Narukokyo Resthouse towards the western end of the gorge. The famous views of the Ofukazawa Bridge can be enjoyed from the observation deck next to the rest house.

Along the main road there are several free parking areas and a large paid one close to the Narukokyo Resthouse. A few steep paths lead from the road to the bottom of the gorge, where the breathtaking Naruko Gorge Walking Trail runs the length of the ravine. This walking trail is usually the best way to see the gorge; however, as of July 2014 it was closed until further notice due to the danger of falling rocks and landslides.

The less dramatic Ofukazawa Walking Trail makes a loop west of the main road, starting around the Ofukazawa Bridge and ending at the Narukokyo Resthouse. This nature trail leads into a forested side valley and remains less crowded during the fall season. It takes about 45 minutes to complete the loop.

Culinary Travel: Zunda Mochi Recipe

This is basically mochi (Soy bean mochi / rice cake) covered in a soy bean paste. Mochi is good. Soybeans are good. Why not combine them together?

What in the world is Mochi? Mochi is Japanese sticky rice cake used both in savory and sweet dishes.  Mochi is usually made from sweet rice (also called Mochi rice) cooked and pounded until it becomes a paste that is very sticky and smooth, then formed into cakes or blocks.  It is often eaten in New Year’s Ozoni soup or baked with soy sauce.  Mochi made from cooked sweet rice doesn’t stay fresh and soft too long, and usually needs to be cooked to be able to be eaten again. 

The following recipe uses Mochiko which is basically powdered sweet rice. It becomes Mochi by adding water and steaming.  Because it is a powder, it is easier to have Mochiko in your pantry longer and it is much simpler to use to make Mochi than rice.  Mochi from Mochiko may seem softer than traditional Mochi, but it stays soft from adding sugar.  It has a lot of sugar, and it is quite sweet.  You could cut some of the sugar if you will eat it right away, however, the texture and shelf life may suffer a bit.

With this Sweet Mochi, you can make many varieties of Japanese sweets.  You could wrap a ball of  red bean paste with Mochi and make it into Daifuku Mochi, put ice cream inside to make Mochi ice cream, or as our second recipe suggests coated with some edamame paste.

Ingredients are simple enough. Mochiko is often available in regular supermarkets.  The steps of making it are easy too.  Just take care dissolving sugar. We suggest adding the sugar in parts and to dissolve completely and evenly. It is easier and tastier than you may think to make Zunda Mochi, enjoy!

The Sweet Mochi

Ingredients
1 cup Mochiko (sweet rice flour or Mochi flour) (160g)
3/4 cup water (180ml)
2 cups sugar (400g)
cornstarch

Directions
1. Mix Mochiko and water in a glass (or other heat proof) bowl and mix well. Add some more water if it's too dry, 1 Tablespoon at a time.

2. Steam the Mochiko dough (leaving the dough in the bowl) in a steamer for 20 minutes.

3. Transfer the steamed Mochi into a pot and cook at medium to medium low heat with 1/3 of the sugar (2/3 cup). When the sugar is completely dissolved, add another 1/3 of the sugar and mix well. Add the last part of the sugar and cook some more until the sugar is dissolved. Take the time to melt the sugar, but be careful not to burn it.

4. Take the hot Mochi out from the pot onto a sheet pan liberally dusted with cornstarch. Shape as you like.

The Zunda Mochi

Ingredients
One 16 ounce bag of frozen shelled edamame
1/2 cup sugar
1 Tablespoon water or more as needed
2 pinches of kosher salt

Directions
1. Remove the skin from the defrosted edamame. You should yield 14 ounces or about 2 1/2 cups of edamame.

2. Place edamame, sugar, water and salt in a food processor. Process into a paste of desired consistency.

3. Top mochi with edamame paste.

Note: Paste freezes well. Yields: 2 cups paste

Travel Options: Adults Only - Cruises

Like it or not, the mainstream cruise lines have gone family-friendly. This is a boon for parents and multi-generational groups looking for trips with something for everyone. It's less appealing for couples and groups of adult friends who aren't won over by wee travelers ... or parents hoping desperately for some time to themselves while the grandparents stay home with the kids. 

True Adults-Only Ships
Your safest bet is to cruise on a ship that doesn't allow any children onboard at all. Yes, they do exist, but there aren't too many. P&O Cruises, a British line, keeps three ships -- Arcadia, Adoniaand Oriana -- as adults-only. You must be 50+ to sail with Grand Circle Small Ship Cruises or the U.K.-based Saga Holidays (though travel companions can be as young as 40). Voyages to Antiquity cruises are deemed "unsuitable for children under the age of 12," and children younger than 16 are dissuaded from cruising. You may also find lifestyle-based, full-ship charters that are kid-free.

Riverboats
A schedule of culturally focused walking tours in historic cities and a lack of mega-ship amenities tend to keep river cruises kid-free. The exceptions are family-focused theme sailings, which usually take place during the summer. But on average, you can take your pick from the rivers of Europe, America, Egypt and Asia, and enjoy local wines and scenic cruising in an appropriately sedate atmosphere.

Exotic Itineraries
Kids can certainly be world travelers, but generally speaking, the more exotic the itinerary, the fewer families it will attract. Try cruises to the Far East,South Pacific (Bora Bora pictured), South America, Africa, the Arctic and Antarctica, and you'll typically find more adult-oriented environments. Even lines that ordinarily attract families will have fewer on these sailings.

Longer Cruises
Families tend to take weeklong or shorter cruises. Choose a longer itinerary, and you're pretty much guaranteed to be sailing with fewer kids. If you're set on the Caribbean, choose a 10-night or longer itinerary, particularly those that include a full or partial Panama Canal transit. For Hawaii, skip the round trip Honolulu itineraries, and opt for the two-week roundtrips out of Southern California. Lengthy repositioning cruises, grand voyages and world cruise segments have a good shot at being kid-free, as well.

School-Term Sailings
Many parents are loath to take their kids out of school for a vacation. Book your cruise during the school term, and you'll definitely see a dip in the number of youngsters onboard. While a Carnival or Royal Caribbean cruise to the Caribbean will always feature children onboard, non-holiday sailings probably will have fewer and feel less overrun with kids. Or combine a term-time trip with some of the above categories (say, a long sailing to an exotic destination on a more adult-friendly line), and you'll greatly reduce your chances of fighting for control of the elevators and hot tubs with the under-18 set.
